He spent much time while at Tate & Lyle developing the novel textural properties of xanthan gum and combinations with other hydrocolloids such as guar, starch, locust bean gum, etc. He is familiar with properties such as pseudoplasticity, thixotropy, gel texture, etc.

He has worked with most of the commercially available food thickeners such as starches, carrageenans, alginates, galactomannans, pectins, exudate gums, microbial gums, seed gums and cellulose based polymers.

He has worked on the development of biofuels such as ethanol from both cellulose and starch. He has surveyed the various technologies for converting cellulose to fermentable feedstocks by both enzymatic and chemical/physical processes. He has worked on the development of new ways to preserve silage by the fermentation of lactobacilli.


He has looked at ways of extracting bioactive substances from plant materials as novel sources of drugs.

At Tate & Lyle, he was the manager of the product development team for xanthan gum and other novel biopolymers such as microbial alginate. He developed a process for the manufacture of silage additives from molasses. He identified and developed speciality chemicals from sugars including glycoside surfactants, urethane polyols, plastics intermediates and humectants.

As marketing Director for Dextra Laboratories, he has spent a great deal of time developing internet marketing solutions for the company. He designed a number of websites with innovative features such as on-line ordering, on-line recruitment systems, news sections, interesting data archives for research scientists, an on-line catalogue for the company, sections for custom synthesis and contract analysis. He also promoted these websites via Google Adwords, Overture, web links, keywords, metatags and page descriptions.

He has worked on sucralose, aspartame, acesulpham, saccharin, talin, and serendipity berry at various times in conjunction with food formulations.

His chemistry training was in pure organic chemistry and this has been central to his activities in the food and pharmaceutical industries. The principles of organic chemistry have been applied to his work on the development, analysis and application of ingredients, sweeteners chemicals, humectants and hydrocolloids.

He provided R&D services to an Australian Company to develop a novel glycoalkaloid for the treatment of basal cell carcinma. This involved new process development, ICH stability trials, trial manufacturing, clinical trials. He is the inventor on a number of patents for this product.He advised a patent agent on a complex challenge involving infringment of patents covering the composition of baby food formulations.He advised and provided analytical services to a major US corporation who were developing novel low calorie carbohydrates.He produced a report for the UK Science Research Councils into the state of carbohydrate research in the UK and made recommendations for future research funding.He developed a pilot manufacturing process for a novel food ingredient for a large UK food company.
