Request Expert

Expert directs the food and feed extrusion program at the University's Food Protein R & D Center. With eight different extruders, Expert believes he has the most complete food and feed extrusion pilot plant at any U.S. university. The Center also offers short courses and practical training in extrusion technology. He can provide advice on various aspects of extrusion screws.

The extrusion of animal feed is a major segment of Expert's research program. He has experience with floating and sinking aquatic feed, poultry feed, alligator feed, and feed products for a variety of other animals. He also conducts research and development studies on new ingredients in extruded feed.

During the past three years, Expert has worked on the development of extruded snack foods, pasta (spaghetti, noodles), ready-to-eat cereals, 3G snacks, and low-fat snacks. He has considerable experience with different starches and other ingredients in extruded snack foods.

Expert works almost every day on some aspect of soybean processing. He is knowledgeable of soybean drying, dehulling, cleaning, flaking, extruding/expanding, and oil removal by cold pressing. He has developed new food ingredients from soybean and soybean hulls. Expert works with soybean meal for food and feed application. He instructs students how to make 48% soybean meal as well as mechanically expelled soy meal. Expert has vast knowledge in soybean processing and soyben meal.


A significant portion of Expert's time has been spent on development of texturized vegetable protein (TVP). He has worked on two different projects to develop TVP from soybeans, but he also can develop this meat substitute product from all types of vegetables, including peanuts. Presently he offer a short course on texturized vegetable protein and give lectures and seminars on how to make and use textured soy protein in food and other application.

Expert just finished a book to be publsihed by CRC Press in August 2003 on halal food processing. He is very knowledgeable on halal food processing and has written several articles on halal food in food magazines.
